Ingredients 

Main Ingredients

  • 2 tablespoon vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 lb chicken thighs, cut into bite-sized pieces
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 4 cups chicken broth
  • 1 can coconut milk
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 8 oz egg noodles, cooked

Garnishes

  • 1 lime, cut into wedges
  • 1 cup fresh cilantro, chopped
  • 1 cup fried shallots

Instructions 

  1. Heat oil in a large pot over medium heat. Add onions and cook until softened.
  2. Add garlic and ginger, cook for another minute.
  3. Add chicken pieces, turmeric, and paprika. Cook until chicken is no longer pink.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Stir in coconut milk, fish sauce, and sugar. Simmer for another 10 minutes.
  6. Serve soup over cooked egg noodles. Garnish with lime wedges, cilantro, and fried shallots.
