Ingredients 

Soup Base

  • 500 g Catfish fillets
  • 1 cup Chickpea flour
  • 1 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Paprika
  • 6 cups Water
  • 1 cup Rice noodles
  • 1 tablespoon Fish sauce
  • 1 teaspoon Salt
  • 1 cup Cilantro, chopped
  • 1 cup Spring onions, chopped
  • 1 cup Lime wedges

Instructions 

  1. 1. In a large pot, bring water to a boil. Add catfish fillets and cook until tender. Remove fish, let cool, and flake into small pieces.
  2. 2. In the same pot, add chickpea flour, onions, garlic, ginger, turmeric, and paprika. Stir well and cook for 5 minutes.
  3. 3. Add flaked fish back into the pot. Pour in water and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. 4. Cook rice noodles according to package instructions. Drain and set aside.
  5. 5. Add fish sauce and salt to the soup. Stir well and cook for another 5 minutes.
  6. 6. Serve soup over rice noodles, garnished with cilantro, spring onions, and lime wedges.
