Ingredients 

Main Ingredients

  • 6 eggs boiled and peeled
  • 2 tablespoons vegetable oil
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 inch piece ginger minced
  • 2 tomatoes chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 cup coconut milk
  • Fresh cilantro for garnish

Instructions 

  1. Boil the eggs for 10 minutes, then peel them.
  2. Heat oil in a pan, add onions, garlic, and ginger. Sauté until golden.
  3. Add tomatoes, turmeric, chili powder, paprika, and salt. Cook until tomatoes are soft.
  4. Add coconut milk and bring to a simmer.
  5. Add the boiled eggs and cook for another 10 minutes.
  6. Garnish with fresh cilantro and serve.
