Burmese Golden Egg Curry

Main Ingredients
- 6 eggs boiled and peeled
- 2 tablespoons vegetable oil
- 1 large onion finely chopped
- 3 cloves garlic minced
- 1 inch piece ginger minced
- 2 tomatoes chopped
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 cup coconut milk
- Fresh cilantro for garnish
Boil the eggs for 10 minutes, then peel them.
Heat oil in a pan, add onions, garlic, and ginger. Sauté until golden.
Add tomatoes, turmeric, chili powder, paprika, and salt. Cook until tomatoes are soft.
Add coconut milk and bring to a simmer.
Add the boiled eggs and cook for another 10 minutes.
Garnish with fresh cilantro and serve.
