Ingredients 

Main Ingredients

  • 400 g Rice noodles
  • 200 g Chicken breast, cooked and shredded
  • 1 cup Bean sprouts
  • 1 cup Cabbage, thinly sliced
  • 1 cup Carrot, julienned
  • 1 cup Cucumber, julienned
  • 1 cup Cilantro, chopped

Dressing Ingredients

  • ¼ cup Fish sauce
  • ¼ cup Lime juice
  • 2 tablespoon Peanut oil
  • 2 tablespoon Soy sauce
  • 1 tablespoon Sugar
  • 1 teaspoon Chili powder
  • 1 clove Garlic, minced

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. 2. In a large mixing bowl, combine the cooked noodles, shredded chicken, bean sprouts, cabbage, carrot, cucumber, and cilantro.
  3. 3. In a separate bowl, whisk together the fish sauce, lime juice, peanut oil, soy sauce, sugar, chili powder, and minced garlic to make the dressing.
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld.
