Ingredients 

Soup Base

  • 2 tablespoon Oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 2 cups Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 cup Chopped tomatoes
  • 1 cup Cooked chickpeas
  • to taste Salt
  • to taste Black pepper

Samosas

  • 4 Samosas, cooked

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add chopped onions, garlic, and ginger. Sauté until onions are translucent.
  3. Add turmeric, cumin, and coriander. Cook for another minute.
  4. Add chopped tomatoes and cook until they soften.
  5. Pour in vegetable broth and coconut milk. Bring to a boil.
  6. Add cooked chickpeas, salt, and pepper. Simmer for 20 minutes.
  7. Place cooked samosas in bowls and pour the hot soup over them.
  8. Serve hot and enjoy!
