Ingredients 

Main Ingredients

  • 1 lb Fish bones and heads preferably white fish
  • 8 cups Water
  • 1 medium Onion quartered
  • 2 stalks Celery chopped
  • 1 medium Carrot chopped
  • 2 cloves Garlic smashed
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black peppercorns
  • 2 sprigs Parsley

Instructions 

  1. 1. Rinse fish bones and heads under cold water.
  2. 2. In a large pot, combine fish bones, water, onion, celery, carrot, garlic, salt, and peppercorns.
  3. 3. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. 4. Skim off any foam that rises to the surface.
  5. 5. Strain the broth through a fine mesh strainer.
  6. 6. Discard solids and return broth to the pot. Add parsley and simmer for another 5 minutes.
  7. 7. Remove parsley and adjust seasoning if needed. Serve hot.
