- 2 tablespoon vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 lb chicken breast, sliced
- 1 teaspoon turmeric powder
- 4 cups chicken broth
- 1 can coconut milk
- 200 g egg noodles
- to taste salt
- to taste black pepper
- 1 bunch fresh cilantro, chopped
Heat oil in a large pot over medium heat. Add chopped onion, garlic, and ginger. Cook until fragrant.
Add sliced chicken breast and turmeric powder. Cook until chicken is no longer pink.
Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Add coconut milk and bring back to a simmer. Add egg noodles and cook until tender.
Season with salt and black pepper to taste. Serve hot, garnished with fresh cilantro and lime wedges.
