Ingredients 

Main Ingredients

  • 1 cup All-purpose flour
  • ¼ cup Shredded coconut
  • 2 tablespoons Sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Coconut milk
  • 1 large Egg
  • 2 tablespoons Melted butter
  • 1 teaspoon Vanilla extract

Instructions 

  1. In a large mixing bowl, whisk together the flour, shredded coconut, sugar, baking powder, and salt.
  2. In another bowl, mix the coconut milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a frying pan over medium heat and lightly grease it with butter or oil.
  5. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
