Main Ingredients
- 2 cups Cooked jasmine rice
- 1 cup Coconut milk
- 1 cup Shredded coconut toasted
- 1 cup Chopped cilantro
- 1 cup Chopped peanuts toasted
- 1 tablespoon Fish sauce
- 1 tablespoon Lime juice freshly squeezed
- 1 teaspoon Sugar
- 1 teaspoon Salt
1. Cook the jasmine rice according to package instructions and let it cool.
2. In a pot, heat the coconut milk until it simmers. Remove from heat and let it cool slightly.
3. In a mixing bowl, combine the cooked rice, coconut milk, shredded coconut, cilantro, and peanuts.
4. Add the fish sauce, lime juice, sugar, and salt. Mix well.
5. Serve the salad at room temperature or chilled.
