Drumstick Vegetable Curry

Main Ingredients
- 2 cups Drumsticks, cut into pieces
- 1 cup Mixed vegetables (carrots, beans, peas)
- 1 large Onion, chopped
- 2 medium Tomatoes, chopped
- 1 teaspoon Cumin seeds
- 1 teaspoon Turmeric powder
- 1 teaspoon Red chili powder
- 1 teaspoon Garam masala
- 2 tablespoon Oil
- to taste Salt
- 2 cups Water
Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Add chopped tomatoes and cook until they turn soft.
Add turmeric powder, red chili powder, and garam masala. Mix well.
Add drumsticks and mixed vegetables. Stir to coat them with the spices.
Add water and salt to taste. Bring to a boil, then reduce heat and let it simmer for 20-25 minutes or until the vegetables are cooked through.
Serve hot with rice or roti.
