Instructions
1. Heat the vegetable oil in a wok over medium-high heat.
2. Add the minced garlic and stir-fry for about 30 seconds.
3. Add the mixed vegetables and cook until tender.
4. Push the vegetables to the side and pour the beaten eggs into the wok. Scramble the eggs until fully cooked.
5. Add the cooked rice to the wok and mix everything together.
6. Pour the soy sauce and sesame oil over the rice and stir well to combine.
7. Season with salt and pepper to taste. Serve hot.
