Ingredients

  • 200 g flat rice noodles
  • 1 cup shredded cabbage
  • 1 cup julienned carrots
  • ½ cup chopped cilantro
  • ¼ cup chopped roasted peanuts
  • 2 tablespoon fish sauce
  • 2 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon chili flakes optional

Instructions 

  1. 1. Cook the flat rice noodles according to the package instructions. Drain and rinse with cold water.
  2. 2. In a large bowl, combine the cooked noodles, shredded cabbage, julienned carrots, chopped cilantro, and chopped roasted peanuts.
  3. 3. In a small bowl, whisk together the fish sauce, lime juice, soy sauce, sesame oil, sugar, minced garlic, and chili flakes (if using).
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Serve immediately or refrigerate for up to 2 hours before serving.
