Ingredients

  • 2 cups Chickpeas cooked
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red onion thinly sliced
  • ¼ cup Feta cheese crumbled
  • 2 tablespoon Lemon juice freshly squeezed
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a frying pan over medium heat.
  2. Add chickpeas and cumin. Fry until crispy, about 5-7 minutes.
  3. In a mixing bowl, combine cherry tomatoes, cucumber, red onion, and feta cheese.
  4. Add fried chickpeas to the bowl.
  5. Drizzle with lemon juice and season with salt and pepper. Toss to combine.
