Instructions
1. In a mixing bowl, combine rice flour, water, coconut milk, and salt. Mix until smooth.
2. Heat the griddle over medium heat and lightly grease it.
3. Pour a small amount of batter onto the griddle to form small circles.
4. Sprinkle chopped scallions, cooked yellow split peas, and grated coconut on top of the batter.
5. Cook until the edges are crispy and the center is cooked through, about 2-3 minutes per side.
6. Serve hot and enjoy!
