  • 1 cup Lentils rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 can Coconut Milk
  • 2 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Pepper

Instructions 

  1. Heat the olive oil in a pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the curry powder, turmeric, and cumin. Stir well.
  4. Add the rinsed lentils, coconut milk, and vegetable broth. Bring to a boil.
  5. Reduce heat to low and let it simmer for about 30 minutes, or until the lentils are tender.
  6. Season with salt and pepper to taste. Serve hot.
