  • 2 cups Mixed greens
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber sliced
  • ½ cup Red onion thinly sliced
  • ¼ cup Peanuts crushed
  • 2 tablespoon Lime juice
  • 1 tablespoon Fish sauce
  • 1 teaspoon Sugar
  • 1 teaspoon Chili flakes

Instructions 

  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  2. In a small bowl, whisk together the lime juice, fish sauce, sugar, and chili flakes until the sugar is dissolved.
  3. Pour the dressing over the salad and toss to combine.
  4. Sprinkle the crushed peanuts on top before serving.
