Noodle Soup Recipe (Khao swe)

Main Ingredients
- 200 g rice noodles
- 1 liter chicken broth
- 200 g chicken breast, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 can coconut milk
- 2 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 lime, juiced
- Fresh cilantro, chopped
- Green onions, chopped
- Red chili flakes (optional)
Cook rice noodles according to package instructions. Drain and set aside.
In a large pot, heat a bit of oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
Add chicken slices and cook until no longer pink.
Stir in curry powder, then add chicken broth and bring to a boil.
Reduce heat and add coconut milk, fish sauce, and soy sauce. Simmer for 10 minutes.
Add cooked noodles to the pot and stir to combine.
Serve hot, garnished with lime juice, fresh cilantro, green onions, and red chili flakes if desired.
