Main Ingredients
- 1 lb chicken breast cut into bite-sized pieces
- 1 can coconut milk
- 4 cups chicken broth
- 1 tablespoon fish sauce
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 inch ginger grated
- 200 g egg noodles cooked according to package instructions
- 1 cup bean sprouts for garnish
- 1 bunch cilantro chopped, for garnish
- 1 lime lime cut into wedges, for garnish
1. Heat oil in a large pot over medium heat. Add onions, garlic, and ginger. Sauté until fragrant.
2. Add chicken pieces and cook until no longer pink.
3. Stir in curry powder and turmeric. Cook for another minute.
4. Pour in chicken broth and coconut milk. Bring to a boil, then reduce heat and simmer for 20 minutes.
5. Add fish sauce and adjust seasoning with salt and pepper.
6. Serve soup over cooked egg noodles. Garnish with bean sprouts, cilantro, and lime wedges.
