Ingredients

  • 200 g Fresh ginger peeled and thinly sliced
  • 1 cup Rice vinegar
  • ½ cup Sugar
  • 1 teaspoon Salt

Instructions 

  1. 1. Peel and thinly slice the ginger.
  2. 2. Blanch the ginger slices in boiling water for 2 minutes. Drain and set aside.
  3. 3. In a pot, combine rice vinegar, sugar, and salt. Bring to a boil, stirring until sugar dissolves.
  4. 4. Place the ginger slices in a jar and pour the hot vinegar mixture over them.
  5. 5. Let it cool to room temperature, then cover and refrigerate. Ready to eat in a few hours, best after a few days.
