Ingredients

  • 2 pieces Pig Ears cleaned
  • 1 cup Cucumber julienned
  • 1 cup Carrot julienned
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Sesame Oil
  • 1 clove Garlic minced
  • 1 teaspoon Sugar
  • to taste Salt
  • to taste Black Pepper
  • 1 tablespoon Chopped Cilantro

Instructions 

  1. 1. Boil the pig ears in a large pot of water for about 1 hour until tender. Drain and let cool.
  2. 2. Slice the cooled pig ears into thin strips.
  3. 3. In a mixing bowl, combine the pig ear strips, cucumber, and carrot.
  4. 4. In a small bowl, mix soy sauce, rice vinegar, sesame oil, minced garlic, and sugar. Pour over the salad and toss well.
  5. 5. Season with salt and black pepper to taste. Garnish with chopped cilantro before serving.
