Instructions
Heat the vegetable oil in a wok over medium-high heat.
Add the minced garlic and stir-fry until fragrant.
Add the mixed vegetables and cook until tender.
Add the diced pineapple and cook for another 2 minutes.
Stir in the cooked jasmine rice, breaking up any clumps.
Add the soy sauce, fish sauce, and curry powder. Mix well.
Cook for another 5 minutes, stirring occasionally.
Remove from heat and stir in the chopped green onions, cilantro, and toasted cashews.
Serve hot and enjoy!
