Pork and Pickled Mango Curry

Main Ingredients
- 500 g Pork shoulder, diced
- 1 cup Pickled mango, chopped
- 1 large Onion, diced
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 2 tablespoon Curry powder
- 1 can Coconut milk
- 1 cup Chicken broth
- to taste Salt and pepper
- 2 tablespoon Vegetable oil
Heat oil in a large pot over medium heat.
Add diced onions, garlic, and ginger. Sauté until onions are translucent.
Add the diced pork and cook until browned.
Stir in the curry powder and cook for another minute.
Add the pickled mango, coconut milk, and chicken broth. Bring to a simmer.
Reduce heat to low and let it cook for about 30 minutes, or until the pork is tender.
Season with salt and pepper to taste. Serve hot.
