Ingredients 

Main Ingredients

  • 500 g Pork Belly cut into chunks
  • 1 can Beans drained and rinsed
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 400 ml Coconut Milk
  • 2 cups Chicken Broth
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add the pork belly and cook until browned.
  2. 2. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  3. 3. Stir in the curry powder and ground cumin. Cook for another minute.
  4. 4. Pour in the coconut milk and chicken broth. Bring to a boil.
  5. 5. Reduce the heat to low and let it simmer for about 1 hour, or until the pork is tender.
  6. 6. Add the beans and cook for another 10 minutes. Season with salt and pepper to taste.
  7. 7. Serve hot with rice or bread.
