Ingredients

  • 4 medium Potatoes peeled and diced
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Fish Sauce
  • 2 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Chili Powder
  • 1 cup Cilantro chopped
  • 1 cup Peanuts roasted and crushed

Instructions 

  1. 1. Boil the potatoes in a pot until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine the cooled potatoes, onion, garlic, fish sauce, lime juice, and chili powder. Mix well.
  3. 3. Add the chopped cilantro and crushed peanuts. Toss gently to combine.
  4. 4. Serve immediately or chill in the refrigerator for later.
