Main Ingredients
- 2 cups Pumpkin, cubed
- 1 cup Coconut Milk
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Curry Powder
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 2 tablespoon Olive Oil
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
3. Stir in the curry powder, salt, and black pepper, and cook for another minute.
4. Add the cubed pumpkin and coconut milk. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, until the pumpkin is tender.
5. Serve hot with rice or naan bread.
