Ingredients 

Main Ingredients

  • 2 cups rice
  • 1 can pigeon peas, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tablespoon olive oil
  • 4 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, and bell pepper. Sauté until softened.
  3. Add rice and stir to coat with oil.
  4. Pour in chicken broth, add pigeon peas, salt, pepper, cumin, and paprika.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
  6. Fluff with a fork before serving.
