Rice Gruel with Salted Duck Egg

- 1 cup Rice rinsed
- 6 cups Water
- 2 pieces Salted Duck Eggs halved
- 1 teaspoon Salt
- 1 tablespoon Chopped Scallions for garnish
1. Rinse the rice until the water runs clear.
2. In a pot, bring the water to a boil.
3. Add the rice and salt to the boiling water.
4. Reduce the heat to low and simmer for about 30 minutes, stirring occasionally, until the rice is soft and the mixture has thickened.
5. Serve the rice gruel in bowls, topped with halved salted duck eggs and chopped scallions.
