Ingredients

  • 1 cup Rice flour
  • ½ cup Coconut milk
  • ½ cup Water
  • 2 tablespoon Sugar
  • ¼ teaspoon Salt
  • 1 teaspoon Baking powder
  • 1 Egg
  • 2 tablespoon Oil (for frying)

Instructions 

  1. In a mixing bowl, combine rice flour, coconut milk, water, sugar, salt, and baking powder. Whisk until smooth.
  2. Add the egg and whisk again until fully incorporated.
  3. Heat a non-stick pan over medium heat and add a little oil.
  4. Pour a small amount of batter into the pan, spreading it out to form a thin pancake.
  5. Cook until bubbles form on the surface and the edges start to lift, then flip and cook the other side until golden brown.
  6. Repeat with the remaining batter, adding more oil as needed.
  7. Serve warm, optionally with a drizzle of honey or a sprinkle of sugar.
