Instructions
Rinse the rice under cold water until the water runs clear.
In a saucepan, heat the olive oil over medium heat.
Add the rice and cook, stirring, for 2 minutes.
Add the water, saffron with its soaking water, and salt. Bring to a boil.
Reduce heat to low, cover, and simmer for 15-20 minutes, until the rice is tender and the water is absorbed.
Fluff the rice with a fork before serving.
