Seven Layer Rice (Danbauk Style with Veggies)

- 2 cups Basmati Rice rinsed and soaked
- 1 cup Carrots diced
- 1 cup Green Beans chopped
- 1 cup Peas fresh or frozen
- 1 cup Bell Peppers diced
- 1 large Onion sliced
- 2 cloves Garlic minced
- 1 tablespoon Ginger grated
- 2 tablespoon Vegetable Oil
- 1 teaspoon Turmeric Powder
- 1 teaspoon Cumin Powder
- 1 teaspoon Coriander Powder
- 1 teaspoon Garam Masala
- to taste Salt
- 3 cups Water
1. Heat oil in a large pot over medium heat. Add sliced onions and cook until golden brown.
2. Add minced garlic and grated ginger, sauté for a minute.
3. Add diced carrots, green beans, peas, and bell peppers. Cook for 5-7 minutes.
4. Add turmeric, cumin, coriander, garam masala, and salt. Mix well.
5. Add rinsed and soaked basmati rice. Stir to combine.
6. Pour in water, bring to a boil. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
7. Fluff the rice with a fork and serve hot.
