Ingredients 

Main Ingredients

  • 500 g Squid cleaned and sliced
  • 1 cup Cherry Tomatoes halved
  • 1 Cucumber sliced
  • ¼ cup Red Onion thinly sliced
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper freshly ground
  • 2 tablespoon Fresh Parsley chopped

Instructions 

  1. 1. Bring a pot of water to a boil. Add the squid and cook for 2-3 minutes until tender. Drain and set aside.
  2. 2. In a large bowl, combine the cherry tomatoes, cucumber, and red onion.
  3. 3. Add the cooked squid to the bowl.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Garnish with fresh parsley and serve immediately.
