- 2 large Sweet Potatoes peeled and grated
- ½ cup All-purpose Flour
- 1 large Egg beaten
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- ¼ cup Green Onions chopped
- ¼ cup Vegetable Oil for frying
1. In a mixing bowl, combine grated sweet potatoes, flour, beaten egg, salt, pepper, and chopped green onions.
2. Heat vegetable oil in a frying pan over medium heat.
3. Scoop spoonfuls of the mixture into the pan, flattening them slightly with a spatula.
4. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
5. Remove from the pan and drain on paper towels. Serve warm.
