Ingredients

  • 400 g thick rice noodles
  • 200 g cooked chicken, shredded
  • ½ cup chickpea flour
  • ½ cup onion, thinly sliced
  • ¼ cup garlic oil
  • ¼ cup fish sauce
  • ¼ cup lime juice
  • ¼ cup roasted chickpea powder
  • ¼ cup cilantro, chopped
  • ¼ cup green onions, chopped
  • ¼ cup fried garlic
  • ¼ cup roasted peanuts, crushed
  • ¼ teaspoon turmeric powder
  • Salt to taste

Instructions 

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a pan, dry roast chickpea flour until it turns light brown. Set aside.
  3. In a large bowl, combine cooked noodles, shredded chicken, roasted chickpea flour, onion, garlic oil, fish sauce, lime juice, roasted chickpea powder, cilantro, green onions, fried garlic, roasted peanuts, turmeric powder, and salt.
  4. Toss everything together until well mixed.
  5. Serve immediately or chill for later.
