  • 200 g Winged Beans sliced
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion thinly sliced
  • 2 tablespoon Lime Juice
  • 1 tablespoon Fish Sauce
  • 1 teaspoon Sugar
  • 1 clove Garlic minced
  • 1 tablespoon Peanut Oil
  • ¼ cup Peanuts roasted and chopped

Instructions 

  1. 1. Blanch the winged beans in boiling water for 2-3 minutes, then drain and cool.
  2. 2. In a mixing bowl, combine the winged beans, cherry tomatoes, cucumber, and red onion.
  3. 3. In a small bowl, whisk together the lime juice, fish sauce, sugar, garlic, and peanut oil.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Garnish with chopped peanuts before serving.
