Main Ingredients
- 2 ripe plantains
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 can coconut milk
- 2 tablespoon vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Peel and slice the plantains into rounds.
Heat oil in a pan over medium heat.
Add chopped onions, garlic, and ginger. Sauté until onions are translucent.
Add chopped tomatoes and cook until they soften.
Add turmeric, cumin, coriander, and garam masala. Cook for a minute.
Add sliced plantains and stir to coat with spices.
Pour in coconut milk and bring to a simmer.
Cook for 20 minutes or until plantains are tender.
Season with salt to taste.
Garnish with fresh cilantro before serving.
