Instructions
Heat the oil in a large pot over medium heat.
Add the chopped onions and sauté until golden brown.
Add the minced garlic and ginger, and cook for another 2 minutes.
Stir in the curry powder and cook for 1 minute.
Add the squid rings and cook for 5 minutes.
Pour in the coconut milk, salt, and pepper. Bring to a simmer and cook for 15 minutes.
Serve hot with rice or bread.
